How To Make Smoked Salmon On The Grill Learning To Smoke Two things that we really love about this area: maple syrup and fresh fish from lake superior. sometimes the two come together. this is our smoked candied. Brush the maple glaze generously over the surface of the salmon fillets. close the lid of the pellet smoker and smoke the salmon at 225°f (107°c) until the internal temperature of the salmon reaches around 140°f (60°c), usually about 1 to 1.5 hours depending on the thickness of the fillets. Mix the marinade ingredients together in a small saucepan. heat until sugar is dissolved. cool. pour the marinade over the salmon chunks, cover and refrigerate over night, stirring occasionally. rinse the salmon and pat dry with paper towels. optional: cold smoke for 6 hours and refrigerate, covered, overnight. Make the glaze. in a small bowl, combine the maple syrup and orange juice and set aside. smoke the salmon. place the salmon on the grates skin side down and smoke for 3 4 hours, or until the internal temperature of the salmon reaches 145 degrees f. brush your salmon with the maple orange glaze every hour while smoking.
